120g plain flour
40g caster sugar
1.5 teaspoon baking powder
1 teaspoon salt
4 tablespoons maple syrup
100g toasted pecans, chopped

Preheat the oven to 200 C / Gas 6. Lightly grease a muffin tin, or line with paper cases.
Mix all dry ingredients together in a bowl.
Then mix all liquid ingredients in another bowl. Add the pecans. Pour into the dry mixture, and fold together until just moistened. (Note that the batter for muffins, unlike cupcakes, should be lightly mixed and have lumps. Don't mix till smooth, otherwise you'll have tough and dense muffins.)
I made these the other day following this exact recipe and they turned out delicious! Only difference was I didn't have caster sugar so I used regular but they turned out great!
