Caribbean pork Colombo

    A flavourful pork dish with the Caribbean's version of curry powder. Colombo is a mix of Caribbean spices you can find in Caribbean markets or online. It contains turmeric, cumin, coriander, mustard, ginger, fenugreek, cloves, pepper, among other spices.

    • 1kg pork, cubed
    • 4 garlic cloves, minced
    • 1/2 red or green chilli, minced
    • 1 tablespoon white vinegar
    • salt and pepper to taste
    • 2 tablespoons oil
    • 3 chives, minced
    • 4 fresh parsley sprigs, chopped
    • 1 onion, minced
    • 1 pinch ground fennel
    • 2 thyme sprigs
    • 1 pinch ground coriander
    • 1 mango, cubed
    • 1 aubergine, cubed
    • 2 courgettes, cubed
    • 4 potatoes, peeled and cubed
    • 3 tablespoons Colombo powder
    • 1/2 lemon, juice only

    1. Put the pork in a bowl with half of the garlic, chilli, vinegar, salt and pepper. Set aside for 1 hour.
    2. Heat the oil in a frying pan over medium heat. Sauté chives, remaining garlic, parsley, onion, fennel, thyme and coriander for 5 minutes. Add pork, mango, aubergine, courgette, potatoes and Colombo. Season with salt and pepper.
    3. Add just enough water to cover the pork and simmer for 1 hour, stirring from time to time. Stir in the lemon juice and serve immediately.
