About this recipe: This is a healthy dish. The rabbit is very tender and delicious, not to mention lean and healthy. Baking in a parchment parcel, or en papillote, ensures the meat stays terrifically moist. It doesn't take very long to make and you can also prepare this dish in advance.


Serves: 6 

  • 1 tablespoon of fresh tarragon, minced
  • 50g grated Gruyere cheese
  • 6 rabbit legs
  • 12 rashers bacon
  • ground black pepper to taste
  • baking parchment

  1. Preheat the oven to 180 C / Gas 4.
  2. Lay a piece of baking parchment onto a work surface. Add half of the tarragon and Gruyere.
  3. Wrap the rabbit legs with two rashers of bacon each.
  4. Add the legs to the parchment, and sprinkle with more tarragon and cheese, then season the rabbit legs with pepper.
  5. Make a parcel out of the parchment so that steam cannot escape. Bake for 45 minutes.
