Homemade Sun-Dried Tomatoes

About this recipe: Tomatoes are dried out in the oven on low heat. Not a labour intensive process, but certainly a lengthy one. Once dried, store them in airtight jars with olive oil to keep them plump and moist.


Serves: 32 

  • 2kg (4 lb) tomatoes
  • salt to taste

  1. Preheat oven to 95 degrees C.
  2. Wash and halve tomatoes. Gently squeeze out the seeds. Place the tomatoes on a non-stick baking tray, and sprinkle with salt to taste.
  3. Bake until tomatoes take on a leathery texture. This could literally take all day; smaller pieces will require less oven time.

I make these tomatoes every week they are so easy you you can use any type of tomato. I lay foil sheet on a grilling tray, cut my tomatoes in half and lay them all over the tray cut side up. The drizzle a small amount of olive oil over them followed by oregano basil salt and pepper all sprinkled over the top. (use as much or as little to suit your taste) on a very low heat around 100 cook for some hours until done to your liking. The aroma around the house will be awesome. Enjoy! - 11 May 2015
