Mix feta, mint, coriander and creme fraiche in a bowl and add one tablespoon of mixture onto a filo pastry sheet and fold into a triangle.
Heat the oil in a frying pan over high heat and fry into hot oil in for 5 minutes,. Remove and place on kitchen paper. Serve warm.
