About this recipe: This is a pasta sauce I like. I often double or triple the quantities and put some in the freezer. Perfect with pasta, great for making lasagne and excellent with aubergine rolls with goat cheese.


Serves: 32 

  • 50ml olive oil
  • 400g onions, minced
  • 4 garlic cloves, minced
  • 1 tablespoon dried oregano
  • 1/2 tablespoon dried marjoram
  • 1/2 tablespoon paprika
  • 1/2 tablespoon dried chilli flakes
  • 1/2 tablespoon salt
  • 2kg tomatoes, chopped

  1. Pour the olive oil in a saucepan and sauté the onion for 1-2 minutes over medium heat. Add the garlic and spices and cook for 2 to 3 minutes, stirring constantly. Add the tomatoes and cook for 45 minutes.
  2. Mix the sauce. Adjust the seasoning as necessary.
