About this recipe:This is a pasta sauce I like. I often double or triple the quantities and put some in the freezer. Perfect with pasta, great for making lasagne and excellent with aubergine rolls with goat cheese.
50ml olive oil
400g onions, minced
4 garlic cloves, minced
1 tablespoon dried oregano
1/2 tablespoon dried marjoram
1/2 tablespoon paprika
1/2 tablespoon dried chilli flakes
1/2 tablespoon salt
2kg tomatoes, chopped

Pour the olive oil in a saucepan and sauté the onion for 1-2 minutes over medium heat. Add the garlic and spices and cook for 2 to 3 minutes, stirring constantly. Add the tomatoes and cook for 45 minutes.
