Spicy tomato pasta sauce

This is a pasta sauce I like. I often double or triple the quantities and put some in the freezer. Perfect with pasta, great for making lasagne and excellent with aubergine rolls with goat cheese.

Ingredients
Serves: 32
- 50ml olive oil
- 400g onions, minced
- 4 garlic cloves, minced
- 1 tablespoon dried oregano
- 1/2 tablespoon dried marjoram
- 1/2 tablespoon paprika
- 1/2 tablespoon dried chilli flakes
- 1/2 tablespoon salt
- 2kg tomatoes, chopped

- Pour the olive oil in a saucepan and sauté the onion for 1-2 minutes over medium heat. Add the garlic and spices and cook for 2 to 3 minutes, stirring constantly. Add the tomatoes and cook for 45 minutes.
- Mix the sauce. Adjust the seasoning as necessary.
