Strawberry heart muffins

    These are vanilla muffins with a lovely strawberry jam centre, and a pink buttercream icing. They are perfect for kids at Valentine's Day, or for a girly afternoon tea party. Don't overmix the muffin mixture - these aren't cupcakes, after all!

    Makes: 10 muffins

    • 250g plain flour
    • 110g caster sugar
    • 1 teaspoon vanilla extract
    • 1 teaspoon baking powder
    • 2 eggs
    • 50g butter
    • 245ml milk
    • 1 pinch of salt
    • strawberry jam
    • Buttercream
    • 100g icing sugar
    • 50g butter, softened
    • 1 teaspoon red food colouring
    • 1 tablespoon milk

    1. For the muffins: Preheat your oven to 180 C / Gas 4. Place one paper case into each mould of the muffin tray.
    2. Mix all the dry ingredients in a bowl (flour, baking powder, sugar) and the liquid ingredients (butter, vanilla and eggs) in another bowl.
    3. Pour the milk into the egg mixture and stir. Pour the liquid mixture into the dry one. Lightly stir the batter just enough to mix the two. The muffin batter should not be mixed for too long. This is what makes the muffins light and fluffy.
    4. Fill the cases with the batter then add a teaspoon of jam and cover with batter. Be careful, do not to fill the cases more than two-thirds full!
    5. Bake in the oven for 12-15 minutes and keep on eye on them. Once cooked, cool the muffins cool before icing them.
    6. For the buttercream: Sprinkle the sugar over the soft butter and whisk. Add the milk and then the red food colouring until the desired shade. Top the muffins with icing using a pastry bag and decorate with a few silver dragees.

    The jam gives the muffins plenty of flavour on its own, so I didn't need to use any icing.  -  04 Oct 2010


    Batter very runny but baked beautifully, only downside was the jam fell to the bottom causing a big gooey mess in the cupcake case. I made a second batch but this time put jam in them after they were baked and were lovely. Even put some chocolate spread in others  -  14 Feb 2016
