    About this recipe: These filo pastry triangles have less fat than those fried in oil, but they are still crispy and delicious! This makes for nice picnic food, party nibbles or even weekend lunches.

    Serves: 4 

    • 1 tablespoon olive oil
    • 3 small leeks, cut into small slices
    • 1 small onion, minced
    • 250g tuna in water, drained
    • 1 tablespoon curry powder
    • 2 tablespoons creme fraiche
    • 1 egg
    • salt and pepper to taste
    • 1 pack filo pastry

    1. In a frying pan, heat the olive oil over medium heat. Add leeks and onion and cook until tender.
    2. Preheat oven to 180 C / Gas 4.
    3. In the meantime, mix the tuna with the curry powder, creme fraiche and egg in a bowl. Stir well until smooth. Season with salt and pepper. Add the leeks and onion to the tuna mixture and stir.
    4. Lay out a sheet of filo pastry on your kitchen work surface, add a teaspoon of tuna mixture and fold the samosa into a triangle. Continue until you no longer have any filo pastry sheets.
    5. Place the samosas in a buttered baking dish, brush with olive oil and bake in the oven for 20 minutes.
    6. Serve warm with a green salad.
