Vanilla rice pudding

    This rice pudding is rich, creamy and delicious. It can be served warm or cold. It is my children's favourite pudding! If you don't have basmati rice to hand, use a medium-grain rice.

    Serves: 8 

    • 350ml water
    • 1/4 teaspoon salt
    • 150g basmati rice
    • 750ml full fat milk
    • 250ml creme fraiche
    • 115g caster sugar
    • 1 tablespoon vanilla extract

    1. Bring water, salt and rice to the boil in a saucepan over medium heat. Reduce heat to low, cover and simmer for 10 minutes, or until there is no more water.
    2. Add the milk, cream, sugar and vanilla and cook over medium heat for about 35 minutes. The rice will become very soft and the mixture will be creamy and thick. Pour the rice pudding into a bowl or individual ramekins. Serve warm or chilled.
