Vegetable tian

    Tian is a layered baked vegetable dish that originated in Provence. It's classic Mediterranean fare - little more than vegetables and olive oil combine to make a delicious, flavourful meal.

    Serves: 6 

    • 6 courgettes, peeled and sliced
    • 6 tomatoes, sliced
    • 4 onions, finely chopped
    • 1 large aubergine, peeled and sliced
    • salt and pepper to taste
    • 100ml olive oil
    • 100ml water
    • 1 tablespoon fresh thyme leaves

    1. Preheat oven to 200 C / Gas 6. In a baking dish, layer the vegetables in alternate layers. Season with salt and pepper. Pour 100ml of olive oil and 100ml of water over the vegetables. Sprinkle with thyme. Bake in the oven for one hour. After 30 minutes, cover the baking dish with aluminium foil to prevent from burning.
