Roasted Squash, Sweet Potato and Garlic

About this recipe: Roasted Squash, Sweet Potato and Garlic Recipe. This is a simple way to prepare winter squash with the added sweetness of sweet potatoes. You can add salt and freshly ground pepper to taste, as well. West Midlands, England, UK

Serves: 6 

  • 2 sweet potatoes
  • 1 medium sized squash
  • 6 garlic cloves
  • handful of fresh thyme
  • 3 tablespoons olive oil

Prep:10min  ›  Cook:50min  ›  Ready in:1hr 

  1. Preheat the oven to 220 C / Gas 7.
  2. I like the skin left on the sweet potatoes so give the skins a good wash then chop into rough 2cm square pieces.
  3. Peel the squash, remove the seeds and cut the flesh into 2cm square pieces.
  4. Wash the thyme and peel the garlic cloves.
  5. Put everything in a roasting tray and add the olive oil and mix well.
  6. Roast for 40 to 50 minutes turning once or twice until everything starts to brown.
