    About this recipe: Lovely meal for two. Serve with chips or rice. Chilli con carne is an easy, one pot stew that can easily be doubled.

    Serves: 2 

    • 1 onion, chopped
    • 1 garlic, crushed
    • 300 to 500g 95% lean beef mince
    • 1 red or green pepper, chopped
    • 1 tin chopped tomatoes
    • 1 tablespoon dried oregano
    • 1 to 2 tablespoons ground cumin
    • 1 tablespoon ground coriander
    • 1 to 2 tablespoons chilli powder, hot or mild
    • 3 tablespoons tomato puree
    • salt and pepper to taste
    • 1/2 tin kidney beans

    1. Fry onion and garlic, then add the mince and fry until brown. Add the red pepper and chopped tomatoes.
    2. Stir in oregano, cumin, coriander and chilli powder. Add tomato puree, salt and pepper to taste and kidney beans and stir. Leave to simmer for 30 minutes minimum.
