    About this recipe: My children get to choose their birthday meals every year and my eldest daughter has chosen this dish for about the last 14 years. It is also a big family favourite :)

    Ingredients
    Serves: 4 

    • 1kg potatoes, diced
    • 3 large carrots, sliced
    • 1 large onion, diced
    • 1 tin corned beef
    • gravy granules

    Method
    Prep:10min  ›  Cook:30min  ›  Ready in:40min 

    1. Add potatoes, carrots and onion to a large pan and add water to cover. Bring to boil and simmer for 20 minutes.
    2. Add corned beef and simmer for another 5 minutes. Add gravy granules and stir. The stew will now thicken up.
    3. It is now ready to serve.

    Serving suggestion

    Serve with pickled red cabbage and beetroot. Also serve with crusty buttered bread.

    I make this up in the morning and reheat it when needed.
