Tomato and basil salad

    Simple salad! Perfect with grilled meats or BBQ. Tomatoes, basil, sea salt and good balsamic vinegar ensure that this salad tastes like summer. As a variation, replace the extra virgin olive oil with garlic oil.

    Serves: 2 

    • 4 vine ripened tomatoes
    • good pinch sea salt
    • handful basil leaves, rolled and thinly sliced
    • 1 tablespoon good aged balsamic vinegar
    • 1 tablespoon extra virgin olive oil

    1. Grab an attractive serving plate; flat glass or black works nicely. Slice the tomatoes thinly and scatter onto plate. Sprinkle with salt, then scatter all over the basil leaves. Drizzle over the vinegar and oil. Cover with cling film and leave at room temperature until ready to serve.

    I made this to serve alongside steaks and green salad and it was perfect - no need for additional salad dressing. I used a punnet of ripe cherry tomatoes.  -  09 May 2011


    I used basil oil instead of fresh basil as i didn't have any handy. Will def make again and use fresh basil next time. Still tasted great with leftover roast beef. Thanks SamanthaSupper  -  09 May 2011
