Orange and garlic salad

    This Italian salad, Insalata Di Arance, is perfect to serve as an accompaniment to a rich main dish. It also works as a simple starter. Wonderful for winter, when oranges are at their best. The sweet orange combines beautifully with the savoury flavours, a delicious yin and yang for the taste buds.

    Ingredients
    Serves: 4 

    • 5 oranges
    • 1 clove garlic
    • 3 tablespoons olive oil
    • 2 large pinches salt
    • 50g salty ricotta cheese (optional)

    1. The oranges are chopped roughly, combined with the thinly sliced garlic, then left to sit for 15 minutes. Add the salt, olive oil (and cheese if you wish) and serve.
