heat a splash of olive oil in a large pan add the minced garlic, chopped onion and chopped peppers. Gently fry for 5 minutes, then add the mushrooms and fry for another 5 minutes. Add the mince and fry until cooked through.
Add the chopped tomatoes, tomato puree, cumin and a very large splash of relish, and stir. Season with salt and pepper and sprinkle in the vegetable stock cube. Stir well, cover and simmer while you prepare the white sauce and grate the cheese.
Preheat the oven to 200 C / Gas 6. If using frozen spinach defrost in a pan of boiling water, or if fresh rinse under clean water.
For the white sauce gently heat the milk in a pan, but do not let it boil. Mix the oil and flour in a bowl with a little of the warm milk, then add the oil/flour mix to the milk in the pan whisking all the time until you have your desired consistency. Add salt and pepper to taste if desired.
To layer the lasagne, place half of the mince mix on the bottom of the dish, then a layer of lasgne sheets, then the spinach, a layer of lasgne sheets, a layer of mince, a layer of lasgne sheets and pour over the white sauce to cover. Sprinkle with the grated cheese and top with sliced tomato.
Bake in the oven for approximately 40 minutes at or until browned. Serve with crusty bread.
