About this recipe: For a delicious start to your day try this breakfast which is ready in a jiffy, rich in fibre, and provides up to 2 of your five-a-day.

Serves: 2 

  • 1 tablespoon vegetable oil
  • 1 teaspoon mustard seeds
  • 4-5 curry leaves (optional)
  • 1/2 red onion, chopped
  • 1 small potato, cubed
  • 1 green chilli, deseeded and chopped (optional)
  • 6 tablespoons rolled oats
  • 1/2 teaspoon salt
  • 1 medium tomato, chopped
  • 60g frozen petit pois
  • 1 teaspoon lemon juice

  1. Heat oil in a pan, add mustard seeds and curry leaves.
  2. Add onions, potatoes and chillies and cook, covered, over medium heat for 2 to 3 minutes, stirring once or twice.
  3. Add oats and stir for a few minutes till the oats are nicely browned.
  4. Add salt, tomatoes and petit pois, cover and cook for another five minutes, checking in between to see that oats don't stick to pan.
  5. Once the potatoes are tender, the oats are ready to serve, just add a sprinkling of lemon juice.

Other ideas

Add a variety by using chopped vegetables of your choice, such as beans or carrots. Add protein by stirring in a beaten egg.
