No-fuss macaroni and cheese

    Quick and easy mac and cheese, with few ingredients, no messing about with flour and roux and useful when you can't be bothered to spend YOUR quality time preparing food while the kids argue with you about doing their homework...

    Serves: 6 

    • 500g macaroni
    • 60g butter
    • 1 onion, chopped
    • 1 clove of garlic, minced
    • 400g chopped tomatoes
    • 120ml milk
    • 240g grated cheese
    • 55g breadcrumbs
    • 1 tsp Italian seasoning
    • salt and pepper to taste

    1. Cook the macaroni according to packet directions. Drain.
    2. In a saucepan, melt 30g of butter or margarine over medium heat. Add onion and garlic, and sauté until onions have a rich golden colour. Mix in the tomatoes, salt and pepper and Italian seasoning. Stir in milk and 180g of grated cheese. Let sauce simmer gently until the cheese is melted, stirring often. Mix in the cooked macaroni.
    3. Transfer macaroni and cheese to an ovenproof dish (preferably greased). Sprinkle with breadcrumbs and 60g of cheese. Dice remaining 30g butter or margarine, and spread evenly over the top.
    4. Bake at 180 C / Gas 4 for about 30 minutes.

    Either use half the recommended pasta or double the sauce. Dish was too dry. Won't be making it again.  -  23 Feb 2012
