Light Chocolate Cake

    This cake is incredibly chocolatey and light in texture. Beaten egg whites are folded into the chocolate cake batter, before being baked to perfection. Serve with a dusting of icing sugar, fresh berries or whipped cream.

    Serves: 8 

    • 1 tablespoon water
    • 125g butter, softened
    • 150g caster sugar
    • 200g dark chocolate
    • 6 eggs
    • 1 knob butter and 1 teaspoon of flour to butter and flour tin
    • 1 pinch salt

    1. Preheat the oven to 200 C / Gas 6.
    2. Melt the chocolate with water in the microwave for 1 minute. Add the softened butter cut into pieces. Mix well.
    3. Whisk the egg yolks and sugar with a hand mixer until fluffy. Add melted chocolate.
    4. In a bowl, beat egg whites and 1 pinch salt until stiff. Fold into chocolate mixture.
    5. Butter a baking tin and coat it with flour. Pour batter into the tin and bake in preheated oven for 20 minutes.
    6. Remove from oven and let cool.
