This cake is incredibly chocolatey and light in texture. Beaten egg whites are folded into the chocolate cake batter, before being baked to perfection. Serve with a dusting of icing sugar, fresh berries or whipped cream.

1 tablespoon water
125g butter, softened
150g caster sugar
200g dark chocolate
1 knob butter and 1 teaspoon of flour to butter and flour tin
1 pinch salt

Preheat the oven to 200 C / Gas 6.
Melt the chocolate with water in the microwave for 1 minute. Add the softened butter cut into pieces. Mix well.
Whisk the egg yolks and sugar with a hand mixer until fluffy. Add melted chocolate.
In a bowl, beat egg whites and 1 pinch salt until stiff. Fold into chocolate mixture.
Butter a baking tin and coat it with flour. Pour batter into the tin and bake in preheated oven for 20 minutes.
