Creamy strawberry tiramisu

    This is a wonderful take on the classic Italian dessert. It's a coffee-free tiramisu, made by layering sponge fingers with mascarpone and strawberries.

    Serves: 4 

    • 16 savoiardi sponge fingers (lady fingers)
    • 250g fresh strawberries
    • 350g mascarpone cheese
    • 4 eggs
    • 80g icing sugar
    • 250ml water
    • 1 tablespoon icing sugar
    • chocolate shavings as needed
    • fresh strawberries for garnish

    1. Place egg yolks in one bowl. Place egg whites in another bowl.
    2. Beat egg yolks with 80g icing sugar until light and fluffy. Stir in mascarpone cheese.
    3. Whisk the egg whites until stiff and fold in the mascarpone mixture.
    4. In a separate bowl, mix together 250ml water and 1 tablespoon sugar. Quickly dip the sponge fingers in the water.
    5. Add a layer of soaked sponge fingers to a large serving bowl and then a layer of strawberries and finally a layer of mascarpone mixture. Repeat.
    6. Sprinkle with chocolate shavings and decorate with fresh strawberries. Chill for 2-3 hours or until set.
