Simple Quince Paste

    This is a great way of making quince paste. Steamed quince puree is simmered with sugar, then allowed to set. Enjoy as a spread or alongside roasted meats or cheese.

    Serves: 16 

    • 1.5kg ripe quinces
    • 800g caster sugar

    1. Peel the quinces and cut into chunks. Steam for about 20 minutes (or use a pressure cooker).
    2. Put them through a food mill over a large pot, combine 1kg of fruit pulp with 800g caster sugar. Cook in a saucepan over low heat for 10 minutes, stirring constantly.
    3. Leave to cool and when very cold, pour over a baking tray lined with baking parchment and smooth. Once hardened and chilled, cut into bite size rectangles.
