About this recipe: This is a fantastic alternative to apple pie. A shortcrust pastry case is filled with quince puree and topped with sliced apples, before being baked to perfection.


Serves: 6 

  • 1 lemon, juiced
  • 1 sheet shortcrust pastry
  • 100g caster sugar, divided
  • 4 large Granny Smith apples
  • 4 quinces

  1. Peel the quinces and cut them into small pieces. Cook in a saucepan with 1 tablespoon of water for 20 minutes over low heat.
  2. Preheat the oven to 220 C / Gas 7.
  3. Transfer the quinces to a food mill and process. Add 60g sugar and lemon juice.
  4. Line a pie dish with shortcrust pastry. Spread quince puree into the pastry case.
  5. Peel the apples, then cut into very thin slices. Arrange apples over the quince puree. Sprinkle with remaining sugar.
  6. Bake in preheated oven for 30 minutes.


Are available in speciality markets when in season. If unavailable, use Granny Smith apples.
