White sauce with Gruyere

    This is a wonderful cheese sauce, which is quick and easy to make. It's packed full of flavour and is wonderful with crepes, potato gratin or over pasta.

    Serves: 6 

    • 500ml milk
    • 1 pinch nutmeg (optional)
    • 100g grated Gruyere or Comté cheese
    • 50g butter
    • 50g plain flour
    • salt and pepper to taste

    1. In a saucepan, melt the butter over medium heat. Do not let it brown. Add the flour and quickly stir until smooth.
    2. Add the milk, quickly stir then cook over low heat until thick, stirring constantly.
    3. When the white sauce is done, season with salt, pepper and nutmeg. Then add the grated cheese and stir until melted.
