Beef Stew with Red Wine

    The beef in this stew is meltingly tender. It comes from stewing the meat with red wine, bacon, mushrooms and carrots for 2 hours. It's the perfect food for the cold winter months.

    Serves: 8 

    • 1 (750ml) bottle red wine
    • 1 onion, finely chopped
    • 250g bacon, diced
    • 3 garlic cloves, finely chopped
    • 500g button mushrooms
    • 750g diced beef stewing steak
    • 750g carrots, sliced
    • 1 bouquet garni (parsley, bay leaf and thyme)

    1. In a large cast iron saucepan, cook the bacon over medium heat for 5 minutes.
    2. Add the onion and garlic and saute for a few minutes. Then add beef, saute for 5 minutes.
    3. Add red wine, mushrooms, carrots and bouquet garni. Cover and simmer over very low heat for 2 hours.
    4. If required, remove the lid and reduce the sauce until it's thick enough to coat the back of a spoon. Serve
