Beetroot and walnut salad

    This delicious salad has a wonderful texture. Grated beetroot is tossed with shallots and walnuts in a lemon vinaigrette. Enjoy as a side dish or starter.

    Serves: 4 

    • 1 clove garlic, crushed
    • 1 shallot, finely chopped
    • 1 tablespoon lemon juice
    • 24 walnut halves, coarsely chopped
    • 2 tablespoons oil
    • 3 raw beetroots
    • salt to taste

    1. Wash the beetroots, then peel and grate over the bowl.
    2. In a bowl, mix together garlic, salt, lemon juice and oil.
    3. Pour dressing over grated beetroot, then toss with shallots and walnuts.
