Chicken with Bacon and Onions

    This is a super-easy recipe, which is perfect for a weeknight. Chicken is pan-fried with bacon and onions. Serve with a salad, potatoes, rice or pasta.

    Serves: 4 

    • 1 teaspoon chopped fresh parsley
    • 2 onions, chopped
    • 250g bacon, diced
    • 4 skinless chicken breast fillets

    1. Cook the bacon in a non-stick frying pan over medium heat for 5 minutes.
    2. Add the chopped onion and saute for 5 minutes (add 1 tablespoon oil if the onions dry up).
    3. Add the chicken breasts. Cook over low heat for 15 minutes. Sprinkle with parsley before serving.
