Chocolate Log with Nutella

    This delicious Christmas cake is easy to make. A swiss roll is filled with Nutella and covered in melted chocolate. Dust with icing sugar to imitate snow, if desired.

    Serves: 8 

    • 1 teaspoon baking powder
    • 100g plain flour
    • 125g caster sugar
    • 4 eggs, separated
    • 60g butter, softened
    • 1 pinch salt
    • Nutella spread as needed
    • dark chocolate as needed
    • 1 knob butter

    1. Preheat oven to 180 C / Gas 4. Line a rectangular baking tin with buttered paper.
    2. Beat sugar and yolks together until light and fluffy. Beat in softened butter. Then fold in flour, 1 tablespoon lukewarm water and baking powder.
    3. In a separate bowl, beat egg whites until stiff. Gently fold into the yolk mixture. Pour batter into prepared tin and bake in preheated oven for 12 minutes.
    4. Once cooked, remove from oven and turn cake out onto a damp tea towel. Spread Nutella over the cake and roll, using the tea towel to help keep the cake in place.
    5. In a small bowl, melt chocolate and butter together. Stir together until well incorporated. Cover cake with this icing. Draw some lines onto the cake to represent wood veins.
