    About this recipe: These cookies are simply delicious. They are chewy and exceedingly moreish. Desiccated coconut and raspberry jam flavour these morsels. They are then drizzled with white chocolate. Enjoy with a cup of tea or coffee.

    Ingredients
    Serves: 8 

    • 200g caster sugar
    • 200g desiccated coconut
    • 20g raspberry jam, softened
    • 3 egg whites
    • 60g white chocolate

    Method

    1. Beat egg whites until stiff, gradually stir in sugar and continue to beat until light and glossy. Stir in coconut and raspberry jam.
    2. Place mixture into a pastry bag with a star nozzle. Pipe small circles onto a baking parchment lined baking tray. (If you do not have a piping bag, use a spoon to form circles).
    3. Preheat oven to 180 C / Gas 4.
    4. Bake in the oven for 15 minutes. Let cool slightly, then remove from the tray.
    5. Meanwhile, melt white chocolate in a double boiler. Dip a fork into the white chocolate and drizzle over cookies. Chill cookies to set the chocolate.
