About this recipe: This delicious quiche is Paraguayan-inspired. A puff pastry case is filled with Emmental cheese, yoghurt, onions, eggs and sweetcorn. Serve with a large salad.


Serves: 4 

  • 1 sheet ready-rolled puff pastry sheet
  • 200g Emmental cheese or other melting cheese
  • 200g Greek-style yoghurt
  • 3 onions, finely sliced
  • 3 tablespoons oil
  • 4 eggs
  • 2 (340g) tins sweetcorn kernels, drained
  • salt and pepper to taste

  1. Preheat oven to 180 C / Gas 4.
  2. Heat oil in a frying pan until hot. Fry onions for 5 minutes, then set aside.
  3. In a bowl, beat together eggs, yoghurt, cheese, sweetcorn, salt, pepper and fried onions.
  4. Line a quiche dish with pastry. Pour filling into pastry case and bake in preheated oven for 30 minutes or until golden brown.

Other suggestions

Melting cheese can be substituted with goat cheese, if desired.
