Courgette and Chanterelle Saute

    This is a fantastic side dish, which is packed full of flavour. Courgettes are sauteed with garlic, shallot and chanterelle mushrooms.

    Ingredients
    Serves: 4 

    • 1kg courgettes, thinly sliced
    • 1 shallot, finely chopped
    • 1 teaspoon cornflour
    • 100ml water
    • 2 cloves garlic, finely chopped
    • 2 tablespoons olive oil
    • fresh chanterelle mushrooms to taste, cleaned and quartered
    • salt and pepper to taste

    Method
    Prep:15min  ›  Cook:35min  ›  Ready in:50min 

    1. Heat oil in a frying pan over medium heat. Saute garlic and shallots for 4 minutes.
    2. Add chanterelles into the pan and cook for 10 minutes. Stir in cornflour and water.
    3. Add courgettes, salt and pepper and cook until tender, about 20 minutes.
