Courgette Egg Bake

    This dish is pretty similar to a fritatta, only it's made in a loaf tin. Sauteed courgettes and red pepper grace this delicious bake. Enjoy thickly sliced with salad.

    Serves: 6 

    • 1/2 clove garlic, crushed
    • 1/2 red pepper, diced
    • 1/2 yellow (or orange) pepper, diced
    • 1kg courgettes, sliced
    • 1 knob butter
    • 200ml creme fraiche
    • 3 tablespoons olive oil
    • 6 whole eggs
    • basil leaves for garnish
    • salt and pepper to taste

    1. Preheat the oven to 210 C / Gas 6. Lightly butter a loaf tin.
    2. Heat oil in a large frying pan and saute garlic. Stir in courgettes and cook until tender. Drain well and set aside.
    3. Microwave the peppers in a small bowl for 2 minutes. Drain and set aside.
    4. In a clean bowl, beat eggs with salt, pepper and creme fraiche. Add courgettes and peppers.
    5. Pour egg mixture into prepared tin and bake in preheated oven for 50 minutes or until golden and firm.
    6. Let cool for a few minutes, then remove from tin and slice. Garnish with fresh basil leaves.

    Lovely dish, enjoyed by all (I grated the courgettes, added some grated cheese and bacon lardons) it ate beautifully both hot and cold.  -  11 Aug 2013


    turned out light and fluffy. added onion to the garlic and an extra egg and didn't really measure the creme fraiche - and cooked it a bit hotter at 220. apart from that - as per the instructions - lol! be great for summer lunch.  -  23 Mar 2016
