Creamy salad dressing

    This salad dressing is creamy and extremely light. The trick is to use a hand mixer to blend all the ingredients together. Use with any salad you fancy.

    Serves: 30 

    • 100ml vegetable oil
    • 2 tablespoons Dijon mustard
    • 200ml natural yoghurt
    • 200ml olive oil
    • 3 tablespoons red wine vinegar
    • dried basil or rosemary (optional)
    • water to thin dressing, if needed
    • salt and pepper to taste

    1. Beat together all the ingredients using a hand mixer. Store in a large glass jar in the refrigerator until needed. This dressing will keep for upto 2 weeks in the refrigerator.
