About this recipe: This traditional French dessert is similar to clafoutis. It's rich, dense and custard-like. This one is studded with sugared pears. Enjoy with a dusting of icing sugar.


Serves: 8 

  • 500ml milk
  • 1 firm pear, cut into 8 wedges
  • 100g caster sugar
  • 125g plain flour
  • 4 eggs
  • 1 knob butter
  • caster sugar for sprinkling

  1. Preheat oven to 190 C / Gas 5. Butter a baking dish.
  2. Mix eggs, flour and sugar together in a bowl until smooth. Gradually add milk, stirring constantly.
  3. Place pears in a frying pan with butter. Cook over high heat for 1 minute on each side. Sprinkle with sugar.
  4. Pour batter into prepared dish and top with pears. Bake in preheated oven for 45 minutes.
