Creamy Fennel Bake

    This is a delicious tasting vegetable bake. Fennel, onions, eggs, single cream and mustard are pureed together, before being baked to perfection.

    Serves: 4 

    • 1 onion, chopped
    • 1 tablespoon wholegrain mustard
    • 2 bulbs fennel, chopped
    • 250ml single cream
    • 3 eggs
    • salt and pepper to taste

    1. Preheat oven to 200 C / Gas 6.
    2. Cook fennel and onions in simmering salted water for 5 minutes. Drain well and squeeze dry.
    3. Mix together fennel, onion, mustard, eggs and cream. Season with salt and pepper. Puree until smooth.
    4. Transfer puree into a greased ring mould and bake for 30 minutes in the preheated oven.
