Baked Sausage and Mash

    This is a great way of making use of leftover mash and sausages. Mashed potatoes are topped with chopped sausage, passata, cheese, more mash and more cheese, before being baked to perfection.

    Serves: 4 

    • 1 clove garlic
    • 1 onion, finely chopped
    • 1 teaspoon olive oil
    • 150ml passata or pasta sauce
    • 500g grated Gruyere or Parmesan cheese, divided
    • 75g fresh parsley, chopped
    • leftover cooked sausages
    • leftover mashed potatoes, divided
    • pepper to taste

    1. Preheat oven to 200 C / Gas 6.
    2. Rub a baking dish with a cut garlic clove, then lightly grease with olive oil.
    3. In a liquidiser or food processor, combine the onion, sausages, remaining garlic and parsley. Process until coarsely chopped.
    4. Spread a layer of mashed potatoes into the dish, then a layer of sausage mixture. Cover with passata, then sprinkle with grated cheese.
    5. Season with pepper, then add a layer of mashed potatoes. Sprinkle a thick layer of grated cheese and bake in preheated oven for 20 minutes, then grill until golden, about 3 minutes.

    I used mature cheddar cheese,and i only used 175g of it,because to me that was more than enough,i would've had to have used a whole block of cheese if i used the whole 500g,it was still very cheesy with the amount that i used though!  -  24 Oct 2011
