    About this recipe: Silicone moulds are brushed with melted chocolate, then filled with two different variations of ice cream or sorbets. They are then served alongside a shortbread biscuit.

    Ingredients
    Serves: 6 

    • 500ml chocolate ice cream
    • 500ml ginger ice cream
    • 500ml lemon sorbet
    • 500ml mango sorbet
    • 500ml raspberry sorbet
    • 500ml vanilla ice cream
    • 6 shortbread biscuits
    • assorted fruit (raspberries, lemon slices, mango, etc.)
    • chocolate shavings
    • melted chocolate (optional)

    Method
    Prep:2hr  ›  Ready in:2hr 

    1. Brush 6 individual silicone cake moulds with melted chocolate (if using).
    2. Fill each mould with any two combinations of ice cream or sorbets. Examples: raspberry and mango, lemon and ginger, vanilla and chocolate, chocolate and ginger.
    3. Freeze for 1 hour.
    4. Turn the ice cream out onto a plate and serve with one shortbread. Decorate with fruit and chocolate shavings, if desired.
