Pan-Fried Potatoes


    This is such a simple recipe, which creates such a wonderful result. Diced new potatoes are pan-fried in oil and butter until crisp and golden. Serve as a side dish with anything you fancy.

    Serves: 4 

    • 5 tablespoons oil
    • 500g new potatoes, cut into 1cm dice
    • 50g salted butter
    • salt to taste

    1. Heat the oil in a large frying pan over medium-high heat.
    2. Add the butter. The mixture will bubble at first; when the foam dies down add the potatoes.
    3. Reduce to medium heat. Cook for 20 minutes. Do NOT stir. The potatoes will brown on one side.
    4. Drain the potatoes on kitchen towels. Season with salt to serve.
