A simple two-ingredient dish, which is simple to make and tastes fantastic. Hollowed out tomatoes are stuffed with sausagemeat and baked to perfection.

4 large tomatoes
500g sausagemeat

Cut the top of each tomato. Scoop out the tomato pulp and reserve. Place the hollowed out tomatoes into a baking dish.
Place the tomato pulp and sausagemeat into a saucepan. Cook for 5 minutes over low heat, stirring to remove any lumps.
Once there is no more lumps, reduce the heat to low and cook for 20 minutes.
Preheat oven to 190 C / Gas 5.
Fill the tomatoes with the meat mixture and bake in preheated oven for 15 minutes. Serve immediately.
