Olive Oil Mayonnaise

    There's nothing quite as good as homemade mayonnaise. The best part is that you can add anything you want to it. For example: mustard, pepper, garlic or shallots. This mayonnaise is great as a sandwich filler, salad dressing or thinned down for a dip.

    Serves: 8 

    • 1 egg yolk
    • 1 tablespoon vinegar, divided
    • 1 teaspoon Dijon mustard
    • extra-virgin olive oil to taste
    • salt and pepper to taste
    • vegetable oil to taste

    1. In a deep bowl, mix together the yolk, 1/2 the vinegar and mustard. Season with salt, pepper and mix well. Slowly add the vegetable oil (almost drop by drop), whilst constantly beating with a hand whisk.
    2. Once the mayonnaise begins to take in the oil, replace the vegetable oil by the extra-virgin olive oil. Continue to slowly add the olive oil and continuously beat until smooth. When smooth, add the remaining vinegar and beat for 1 minute more.


    If the mayonnaise is too thick, add 1 teaspoon of warm water to make it lighter and less firm.
