    About this recipe: Loaded with prawns, ham, chicken and vegetables - this fried rice dish tastes just like the one you can order at your favourite Chinese takeaway. Try making this 'special' fried rice with any leftovers you have.

    Ingredients
    Serves: 8 

    • 280g uncooked white rice (or leftover cooked rice)
    • 3 tablespoons sesame oil
    • 1 small onion, chopped
    • 1 clove garlic, chopped
    • 130g small prawns
    • 50g diced ham
    • 140g leftover cooked chicken, chopped
    • 2 celery sticks, sliced
    • 2 carrots, peeled and diced
    • 1 fresh green pepper, chopped
    • 75g peas
    • 1 egg, beaten
    • 4 tablespoons soy sauce

    Method

    1. Cook rice according to package directions. While rice is cooking, heat a wok or large frying pan over medium-high heat. Pour in sesame oil and stir in onion. Fry until golden, then add garlic. When garlic is lightly browned, mix in prawns, ham and chicken.
    2. Lower heat to medium and stir in celery, carrot, green pepper and peas. Fry until vegetables are tender. Stir in beaten egg and cook just until egg is scrambled and firm.
    3. When rice is done, mix thoroughly with vegetables and stir in soy sauce. Adjust seasoning to your preference and serve immediately.

    Cooked this recipe last night. Thought the 4 tablespoons of soy sauce might be a bit strong. Not so. The wife loved it. Felt really chuffed. Lovelllllllly - 12 Oct 2013
