About this recipe:This is a great way of making use of any leftover salmon. Smoked salmon, baked salmon, butter and dill are blitzed together. Spread on crackers, crostini or canapes. It also makes a fantastic sandwich filler.
1 teaspoon fresh dill
125g butter, softened
125g smoked salmon
250g salmon fillets or steaks
salt and pepper to taste

Preheat oven to 180 C / Gas 4.
Place fresh salmon onto a large sheet of foil. Season with salt, pepper and close the foil (but not completely).
Bake in preheated oven for about 15 minutes, until the salmon is cooked but not dry.
Place the dill, butter, smoked salmon and cooked salmon into a food processor and process until just blended.
Transfer to a serving bowl, cover and refrigerate until ready to serve.
