Baked Salmon with Marmalade

About this recipe: This simple salmon dish is tender and packed full of flavour. A salmon fillet is spread with orange marmalade, sealed in a foil packet and baked to perfection. Serve with potatoes and green beans, if desired.


Serves: 1 

  • 1 fresh salmon fillet
  • 1 tablespoon olive oil
  • 2 tablespoons orange marmalade
  • salt and pepper to taste

Prep:5min  ›  Cook:20min  ›  Ready in:25min 

  1. Preheat the oven to 180 C / Gas 4.
  2. Place the salmon fillet, skin side down, on a large sheet of foil (shiny side up). Drizzle with olive oil, salt and pepper and coat generously with orange marmalade. Close the packet.
  3. Place the packet on a baking tray and bake for 20 minutes. Serve.

Alternative cooking methods

You can also cook the salmon packet on a barbecue or under the grill.
