1 tablespoon olive oil
2 tablespoons orange marmalade

Preheat the oven to 180 C / Gas 4.
Place the salmon fillet, skin side down, on a large sheet of foil (shiny side up). Drizzle with olive oil, salt and pepper and coat generously with orange marmalade. Close the packet.
Place the packet on a baking tray and bake for 20 minutes. Serve.
Alternative cooking methods
You can also cook the salmon packet on a barbecue or under the grill.
