Rum and Chocolate Truffles

    There's nothing quite like homemade truffles. Dark chocolate is blended with butter, sugar, creme fraiche, egg yolks and rum. The mixture is then formed into small balls and rolled in cocoa powder.

    Serves: 12 

    • 1 tablespoon vanilla extract
    • 100g butter, softened
    • 100g icing sugar
    • 100ml creme fraiche
    • 2 egg yolks
    • 250g dark chocolate (70%)
    • 50ml rum
    • unsweetened cocoa powder, icing sugar or desiccated coconut for rolling

    1. Melt the chocolate in a double boiler.
    2. Add the butter, sugar and vanilla and stir well.
    3. Remove from heat and gently stir the 2 egg yolks, creme fraiche and rum.
    4. Refrigerate for 3 hours. The mixture must be cold and semi-solid.
    5. Place a few tablespoons cocoa powder into a small bowl.
    6. Remove chocolate mix from the fridge and quickly roll into small balls. Roll in cocoa powder and repeat.
    7. Store in the refrigerator.
