About this recipe: A sophisticated appetiser, which is quick and easy to make. A delicious goat cheese and smoked salmon mousse is spread between layers of crackers and served.


Serves: 4 

  • large round crackers, as needed
  • 150g fresh goat cheese
  • 4 slices smoked salmon
  • A few chives
  • Salt, pepper to taste

  1. Process the goat cheese and 3 slices of salmon in a liquidiser or food processor until smooth. Season with salt, pepper and chopped chives.
  2. Spread the salmon mousse on several crackers and stack to form a mini-tower. Garnish with the remaining slice of salmon.


Cut large circles from sheets of filo pastry, brush with butter and sprinkle with herbs/spices of your choice. Bake for 10 minutes at 180 C / Gas 4. Use these instead of the crackers.
