About this recipe: To make this dish a success, use extremely fresh scallops. Scallops are pan-seared in a super-hot pan. Enjoy with salad, rice, potatoes or pasta.


Serves: 4 

  • 12 scallops
  • salt and pepper to taste

  1. Heat a cast iron pan or a heavy-based frying pan over high heat. (Do not add any fat).
  2. Season the scallops with salt and pepper.
  3. When the pan is really hot, add the scallops.
  4. Remove from the heat. (The hot pan will be enough to cook the scallops).
  5. Turn the scallops over after 1 minute.
