Bacon, Spinach and Goats Cheese Quiche

About this recipe: This quiche will not disappoint. It's relatively simple to make and tastes fab. Serve with a side salad for lunch or dinner. It also does well as picnic food or in packed lunches.


Serves: 8 

  • 1kg frozen chopped spinach
  • 1 sheet ready-rolled shortcrust pastry
  • 1 teaspoon vegetable oil for greasing
  • 150g goat cheese
  • 2 eggs
  • 200ml single cream
  • 4-6 rashers thin sliced streaky bacon
  • 75g grated Gruyere cheese (optional)
  • salt and pepper to taste

  1. Preheat the oven to 180 C / Gas 4.
  2. Grease a quiche dish, then line with shortcrust pastry. Prick the pastry all over with a fork.
  3. Arrange the bacon in the pastry case in the shape of a star. Set aside.
  4. Heat a large frying pan over medium heat. Add the spinach and heat for about 15 minutes or until the spinach has thawed and the water has evaporated. Drain and cool slightly.
  5. Meanwhile, beat together the eggs in a large bowl. Stir in the cream, salt, pepper and spinach.
  6. Pour egg mixture over the bacon and top with slices of goat cheese (form a circle and then place one in the centre). Sprinkle Gruyere cheese on top, if using.
  7. Bake in preheated oven for about 45 minutes or until cooked and golden.

Have now used this recipe several times, it's loved by family and friends. Last time I substituted smoked salmon for streaky bacon which improved the flavour and was easier to divide into slices. - 12 Nov 2015
