About this recipe: This French dessert is a speciality of Normandy. Rice is slowly baked with sweetened, cinnamon-spiced milk. The long baking process creates a deliciously thick, caramelised top.


Serves: 12 

  • 2 teaspoons vanilla sugar
  • 175g caster sugar
  • 175g short grain pudding rice
  • 2 litres raw milk (or fresh full fat milk)
  • 1 pinch ground cinnamon

Prep:5min  ›  Cook:5hr  ›  Ready in:5hr5min 

  1. Preheat the oven on 150 C / Gas 2.
  2. In a large baking dish, mix together the sugar, vanilla sugar, rice, milk and cinnamon.
  3. Bake in the oven for 4 1/2 to 5 hours.


Raw milk can be found in speciality markets, farms or online.

This is scrumptious! (and very easy, and with a touch of class I never thought rice pud was capable of). I halved the recipe and it was done in roughly 2.5 hours. I put in about a teaspoonful of cinnamon. - 28 Jun 2013
