Cherry Tomato Quiche

    A simple, yet flavour-packed quiche that's a doddle to make. Serve warm or cold, as a starter or main course. It also does well in packed lunches.

    Serves: 6 

    • 1 sheet ready-rolled shortcrust pastry
    • 100ml creme fraiche
    • 250g cherry tomatoes
    • 3 large eggs
    • 300g Cantal or Gruyere cheese, grated
    • 1 pinch ground nutmeg
    • salt and pepper to taste

    1. Preheat the oven to 190 C / Gas 5.
    2. Line a quiche dish with the shortcrust pastry.
    3. Mix together the cheese, eggs and creme fraiche in a large bowl. Season with salt, pepper and grated nutmeg.
    4. Pour egg mixture into pastry case. Arrange cherry tomatoes in a circle.
    5. Bake in preheated oven for 30 minutes. Serve warm or cold.
